After two years spent working with the Fair Trade authorities, the FAIR Spirits company releases this Belize rum with a unique taste. Sugar and molasses used in its making are produced by the BSCFA cooperative (Belize Sugar Cane Farmers Association) gathering about 6 000 small producers of this Latin America country.

This rum has been aged locally, for at least five years, in American oak casks. It has been imported to France and bottled in the Cognac region. FAIR buys the rum at fair trade prices and donate 2.5% of its revenue to support local outreach and development programs.

Certified "Fair Trade", this Belize rum balances between sweetness and strength, and reveals utter chocolatey and coffee flavours.

Colour: old gold.

Nose: round and lively. Medicinal and herbaceous, quite fruity (pear, white currant) and briny. Spicy (cloves, nutmeg), grows in strength and allows essential oils of thuja and vanilla to break through. Delicate citrus flavours (tangerines and kumquat) contrast magnificently.

Palate: rich and heady. A perfect reminiscence of the nose, and then reveals its fruity character (apricot, peach, melon) with pastry notes (creme brulee, madeleine).

Finish: long and heavy. Fruity (peach and citrus peel), earthy (gentian root) with notes of tuberose, gillyflower and dahlia. A spicy return of Cayenne pepper.
