The Rhumerie de Chamarel is located at 300 meters altitude in the south-west of Mauritius. Above all it is a family story that began in 1996, when the Couacaud family bought the Domaine de l'Exil in the Chamarel region to grow sugar cane.

It was 12 years later that the distillery was born with the idea of producing its own rum, pure cane juice and coming exclusively from the estate's plantations. It is one of the youngest distilleries in the country, also considered one of the most beautiful.

La Rhumerie de Chamarel is nestled in the heart of a vast sugar cane plantation, which allows it to control the entire production process, from harvesting the sugar cane to bottling the rum. It cultivates three types of sugar cane in an area of 450 hectares: red sugar cane (r570), yellow (r573) and blue (r579), which brings a certain complexity to the production of the different rums. .

The distillery favours an artisanal approach to rum making, using traditional methods to ensure the exceptional quality and flavour of their products. The rum is distilled there in small quantities, in order to guarantee the monitoring and quality of the products, through a combination of copper stills and distillation columns, which give rise to unique flavours.

The distillation method therefore varies:

- in a continuous method, using a copper Bardet-type column, which will make it possible to obtain white rums with strong aromas and lots of character.

- the other method consists of distilling with two copper stills, heated with steam. This process is called iron distillation, and allows the aromas of sugar cane to be highlighted.

The rum is then aged in oak barrels which give it rich and complex flavours.

The Chamarel rum factory today produces great old rums such as XO and VSOP.
