La Gauloise liqueur is produced by Distillerie du Centre, a historic distillery located in Limoges and founded in 1789. It embodies one of the last liqueur-making traditions in this city, which was once an important French centre for the production of liqueurs and spirits. The origin of the recipe is steeped in ancient history: in the 18th century, a liqueur maker named Requier is said to have revived a formula found in an old manuscript. This herbal liqueur then became the distillery's signature speciality.
La Gauloise belongs to the family of liqueurs made from a complex blend of herbs, roots and spices. The plants are macerated and then distilled before being blended with an alcoholic base and sugar. The exact recipe remains a secret, but we know that several botanical ingredients are used in its composition, providing a rich and structured aromatic palette combining vegetal, spicy and floral notes. The range is based mainly on two expressions. La Gauloise Jaune (around 40%) offers a more rounded and accessible style, with a supple texture and aromas reminiscent of sweet spices and a slight hint of honey. La Gauloise Verte is distinguished by a more intense and herbaceous profile, with a more pronounced vegetal expression and a more powerful structure. Some vintages may also be aged in casks, which adds woody nuances and additional complexity. Traditionally enjoyed as a digestif, neat or on the rocks, La Gauloise also has a place in mixology thanks to its unique aromatic character. Today, it is a heritage French liqueur that illustrates the ancient art of distillation and blending of plants.
