Each bottling in the "The Wills family cask collection" has been selected by a member of the Wills family, the founders of the Kilchoman Distillery.
Kilchoman 5 year old PX Sherry Single Cask was selected by James Wills, son of Anthony and Katy. It was made from a local barley grown by the Rockside farm, which was then malted and peated (20ppm) at the distillery.
This version was aged in a barrel that had contained Sherry Pedro Ximenez then distilled in 2015.
Aromatic profile: both creamy and lively, slightly peaty and smoky, the first nose is marked by superb notes of candied lemon and pineapple.
Edition exclusively bottled for France.

First distillery built on Islay, 125 years ago, Kilchoman has been built as a “farm-distillery” and grows its own barley.
About 100 tons are harvested and malted at the distillery, 30% of the distillery’s needs. The rest is supplied by the Port Ellen malt-house. It is also part of the 6 last distilleries operating with traditional malting processes. In 2009, Kilchoman crafted its first recognized Single Malt. Kilchoman is one of the smallest distilleries of Scotland with an annual production of about 100.000 liters.
