This cheddar reveals the umami of roasted onions with, in the background, the anise freshness of caraway seeds. A creamy cheddar with vegetal notes.

Tasting advice: take the cheddar out of the refrigerator 30 min before serving to allow the aromas to develop. Perfect to enjoy alone, with fruits/chutney or to accompany a hot meal.

It was in 1987 that the brand's first cheddars were made, in the former parish of Knockanore, in County Waterford, Ireland.

The Irish name "Cnonc an Oir" translates to the Golden Hill.

Established for more than 60 years on these hills, the Lonergan family has a herd of 120 cows. For them, the production of quality cheese is first and foremost a meticulous selection of its "Friesian" cows (Pie-noire) and respect for the environment in which they live.

Cheddar cheese is handcrafted from raw cow's milk using traditional craftsmanship. Matured on the farm, this results in a hard, textured, firm cheese with subtle and melting flavours.

Knockanore Cheddar is one of the few cheeses in Ireland that can be called artisanal cheese because it is produced with milk directly from the farm. The brand's cheddars contain no artificial flavours or preservatives.

Since their launch over 30 years ago, Knockanore cheddars have won numerous awards.

Eamonn Lonergan is also the master cheese maker and refiner of the Little Milk Company, a cooperative of family dairy farms from organic farming. It uses organic milk from the cooperative to produce delicious Little Milk Company organic cheddars, including mature Cheddar, aged between 6 and 9 months.
