Dalwhinnie Distillers Edition 1997 Oloroso Finish 70cl 43°

Distillery : Dalwhinnie / Country : Scotland / Reference: : 20692

Epitomizing the most remote and high perched Scotch distilleries of the Highlands, Dalwhinnie has a character of its own with distinctive peaty and heathery notes, rising from a rich aromatic palette.

When reaching bottling age, each Classic Malt undergoes a finish in a cask from the Iberian Peninsula, and becomes a Distillers Edition.

With exceptional smoothness and aromatic richness, Dalwhinnie Distillers Edition has been refined in casks that previously contained Oloroso Sherry, a generous and renowned spirit selected for its perfect balance between strength and elegance. As the literal translation from Spanish suggests, these "fragrant" casks are the most characterful and rich Spanish casks.

Dalwhinnie lovers will appreciate the way aromas rising from the casks enrich without muffling the honeyed notes of heather, signature of the distillery.

The marriage between a cask and a whisky is a traditional and steady custom of malt elaboration, but this double maturation obviously brings out more depth and complexity to this great Malt Whisky.

Many distilleries from the end of the Victorian period have been built in inhospitable areas.

Dalwhinnie is no exception to the rule as it is located at the heart of the Highlands, at the junction of the routes formerly taken by cattlemen from West and North Scotland, running more than 300 meters high. Dalwhinnie has always been consistent with its Gaelic name, meaning “the place to meet”. The distillery has been placed there as pure water flows down from the mountains’ snow melt, enriched by fragrant heather flowers, imparting the Single Malt its floral aromas and characteristic sweetness. Dalwhinnie draws waters from the “Lochan an Doire-Uaine” (translating as “the lake in the green bush” in Gaelic), more than 600 meters high in the Drumochter Hill Mount. Dalwhinnie is also perfectly located in the Highlands, as the distillery was on the brand new train line completed in 1897, the Highland Railway. The unique character of Dalwhinnie ranks the distillery in the Classic Malts Selection. Created more than 20 years ago, this selection recognises Single Malts crafted in the tradition of iconic distilleries, and offers the most impressive whisky styles Scotland has to offer.

Colour: pale amber.

Nose: heathery notes mingle with the sweet Oloroso and liquorice perfumes and embrace the honeyed maltiness of Dalwhinnie.

Palate: a quite fragrant spice bouquet gives way to more malty and woody flavours. After a quick burst of sweetness, a rich note of grapes hits the midpalate.

Finish: the generous finale, a bit more honeyed and lingering than usual, develops with slightly peated woody sweetness.

Dalwhinnie is perfect, served with Saint-Nectaire farmer cheese or crab claws. You may also serve it frosty and savour it with a lukewarm chocolate cake...
