Each bottling in the "The Wills family cask collection" has been selected by a member of the Wills family, the founders of the Kilchoman Distillery.

Kilchoman 9 years old Sherry Hogshead was selected by George Wills, the eldest son of Anthony and Kathy Wills.

Distilled in 2011, this Single Malt is produced from 50 ppm peat barley from the Port Ellen malt house. Aged in a Hogshead that contained Sherry, this version has exceptional finesse and complexity. Sherry and peat are in perfect harmony.

The taste palette highlights exotic, spicy, medicinal, chocolate and floral notes.

First distillery built on Islay, 125 years ago, Kilchoman has been built as a “farm-distillery” and grows its own barley.


About 100 tons are harvested and malted at the distillery, 30% of the distillery’s needs. The rest is supplied by the Port Ellen malt-house. It is also part of the 6 last distilleries operating with traditional malting processes. In 2009, Kilchoman crafted its first recognized Single Malt. Kilchoman is one of the smallest distilleries of Scotland with an annual production of about 100.000 liters.

Nose: elegant, racy, marked by notes of beeswax, apricot kernel, exotic fruits (mango, persimmon) and bitter orange. When aired, it evolves into spices (candied ginger), roasting (coffee, tea), bourbon vanilla, precious wood (stave oak, antique furniture) and floral notes (iris, rose).

Palate: lively, dynamic with hints of spices (cloves, ginger, nutmeg) and more medicinal tones (arnica, mustard seed). In the mid-palate, a chocolate, liquorice and intensely smoky peat takes over. The aftertaste has a remarkably velvety, almost fleshy feel.

Overall: long, tasty with notes of rose petals, apricot jam, very ripe mangoes and juicy oranges. All these flavours are deposited on a chocolate, iodized and vegetable peat (tobacco, mushrooms).
