Cavehill is the result of modern distillation that awakens the senses with aromas of spices and fresh apples that evolve into creamy notes of vanilla and custard.

To make this Straight Bourbon, the Kentucky Rabbit Hole distillery uses a four-grain recipe: 70% corn, 10% malted wheat, 10% malted barley and 10% honey-malted barley.

It is then aged in American white oak barrels and once matured, a small batch of 15 carefully selected barrels is assembled to create this Bourbon.

Kaveh Zamanian left a career in psychology to create Rabbit Hole, a spirits distillery in Kentucky, where he seeks to reinvent American Bourbon by combining tradition and innovation, bringing back to life the creative spirit of distillers past.


Coming from a brilliant career as a clinical psychologist and psychoanalyst, Kaveh Zamanian found his true vocation when meeting his wife, originally from Lousville. He then became passionate about the indigenous spirit of America as well as Bourbon and undertook to set up his own distillery in Kentucky.


This is where Rabbit Hole comes to life, with the desire to offer an avant-garde brand to break away from the monotony of traditional American Bourbons. Kaveh wanted to offer something new, personal and authentic. This is why he chose to create his own recipes combining traditional techniques with innovative musts to create a range of unique and high-end expressions.

Nose: fresh apples, honey, spices.

Palate: creamy flavours of orange, honey, mint, notes of toasted cereals.

Finale: vanilla cream.
