The inspiration for the name of this new Single Malt emerged from the very heart of the distillery. During the renovation of the old farmhouse begun in 2013, particular care was taken to restore rather than replace many sections of the historic building.
One of these sections was the oldest space: the Doocot (Scottish for dovecote).
This space, once home to doves and pigeons, has become the historic heart of the distillery, preserved in its entirety. Since March 2015, it has housed the distillery's very first cask.
With its fruity character, Doocot is distinguished by its lightness, fruity intensity, floral note and rich color inherited from the premium bourbon casks in which it aged. It is made from the same distillate as the first, but has benefited from longer oak aging, enabling it to develop its complexity while maintaining its balance.

Since generations, the Wemyss family has cultivated a passion for whisky.
In 2005, they founded the independent bottling company “Wemyss Malts”, followed by the Kingsbarns distillery in 2014, establishing themselves firmly in the whisky industry.
William Wemyss, the founder, and Isabella Wemyss, the production manager, run Kingsbarns as brother and sister partners. Involved in every decision, they have led the distillery to the success it enjoys today.
Their respect for tradition, combined with a flair for innovation, has propelled the Wemyss name forward, forging new paths in the world of Scotch whisky and enriching the heritage of Lowland distilling.
The family continues to run Wemyss Malts, which thrives on creating exciting new blends and single casks.
Following the installation of the stills in 2014, distillation began in January 2015. Peter Holroyd, the distillery manager, and his team, delighted with the quality of the spirit, decided to bottle it.
Today, this whisky has won numerous awards.
Single Malt is made from just three ingredients: barley, water and yeast. At Kingsbarns, the barley is sourced exclusively from local farms, supporting British farmers in a sustainable way.
The castle on the bottles is the family's, and has become the distillery's emblem.
Kingsbarns Balcomie single malt is characterized by fruity and floral aromas, with hints of vanilla, caramel and cereals. It is described as light and smooth on the palate.
