P.X. Cask Single Pot Still is an Irish whiskey aged in casks that previously contained Pedro Ximénez (P.X.), a sweet wine from Andalusia. This aging process gives it exceptional richness and complexity.

Pedro Ximénez, often abbreviated to P.X., is a Spanish white grape variety grown mainly in Andalusia, renowned for its sweet, rich and concentrated wines, obtained by sun-drying the grapes before fermentation.

This Single Pot Still, initially aged in Oloroso casks, has been transferred to vintage PX Solera casks, some of which are exclusively made of chestnut, a rare wood for whiskey aging.

The combination of Oloroso and PX casks has produced a Single Pot Still of extraordinary richness and decadence.

Boann Distillery was founded in 2015 by the Cooney family, who have always dreamed of making and distilling their own Irish whiskey. Its nano-copper stills and refined oak cask cellars guarantee the production of whiskey with character. The distillery is part of Origin Green and respects the commitments of this sustainability charter to become a more sustainable producer.


As its local production is still very recent, its aged whiskeys are currently carefully selected from other distilleries. However, it benefits from the expertise of the renowned John McDougall, a master distiller with decades of experience.


Their philosophy


"Every raw material is 100% natural and 100% local. Every drop of water is drawn from our well in the Boyne Valley. Every grain of barley is supplied by our native farmers."


They operate a closed-loop system for water, recycling all incoming water and maximizing energy recovery.


A family-run busines


The Boann distillery is located on the banks of the River Boyne. Legend has it that Boann, an Irish goddess, created the River Boyne. One day, the goddess went for a walk to an ancient well, even though her husband had forbidden her to do so. As she approached, she challenged the power of the well, causing the waters to rise violently to the sea, creating the River Boyne. The goddess lost her life by drowning.

Nose: dried fruit (raisins, figs), chocolate, caramel, sweet spices, vanilla and woody notes.

Palate: velvety, rich texture. Honey syrup, chocolate.

Finish: Long and warm, with fruity, caramelized and woody notes.
