Located in Yilan County in Taiwan, the Kavalan distillery is impressive for its size and its stills, 20 in number and with a capacity of 7,000 and 12,000 litres.
Kavalan whiskies go through a double distillation, the second being divided into three parts: the head (which corresponds to the first alcohol that comes out of the still), then the heart and the tail. Only the heart and the best parts of the head and tail have been put in barrels for ageing. The distillate has then been placed in an ex-bourbon cask (B150716020A) and bottled cask strength when the time came.
