The afternoon tea, also known as "tea time", is not just a tea break during which you eat biscuits. It's a real meal, a moment of sharing that usually takes place on Sunday around 5 p.m. It is a social ritual that the English have adopted since the Industrial Revolution.

In this article you are going to discover an ideal cake recipe to accompany your tea during "tea time".

Lemon cake

This cake made from "lemon curd", a typically British lemon spread, will become a must-have for your next tea breaks.

It's as easy to make as it is delicious.

Cake au citron

Ingredients :

- 250g flour

- 130g melted butter

- 130g sugar

- 3 eggs

- 200g lemon curd

- 1 teaspoon baking powder

Steps :

1) Preheat the oven at 160°.

2) In a bowl, whisk the eggs with the sugar until the mix whitens and doubles in volume.

3) Add the previously melted butter as well as the flour and the baking powder.

4) When the batter is smooth, add the lemon curd and stir.

5) Pour the batter into a buttered and floured baking tin.

6) Cook for 50mn/one hour at 160°. The cake must be golden.
