Mackays Marmalade Muffins
A recipe for delicious Mackays marmalade muffins as an original treat for tea time!
To make this recipe, here is the list of ingredients for 6 large muffins:
- 150g of flour
- 1 tablespoon of yeast
- 1/4 teaspoon salt
- 1 bulging tablespoon almond powder
- 50g soft butter (melted and slightly cooled)
- 1 large egg
- the zest and juice of a large orange (approximately 120ml - if this is not enough, add a little milk)
- 220g Mackays Orange, Orange & Champagne marmalade or Three Citrus marmalade
- to decorate muffins, prepare 2 tablespoons of warmed marmalade, orange peel and cranberries.
Recipe :
- Butter 6 muffin cups
- Pre-heat oven to 180°/200°C (thermostat 6)
- Pour the Mackays marmalade into a bowl and stir with a wooden spoon to loosen
- In another bowl, combine flour, yeast and salt
- In a 3rd bowl, combine orange juice, zest, almonds, egg and butter
- Sift the flour, yeast and salt mixture using a strainer over the orange juice, zest, almonds, egg and butter mixture.
- Mix quickly to obtain a homogeneous dough. Mix the marmalade already stirred with the previous preparation
- Pour the mixture evenly into each muffin pan
- Bake in the oven for 25 minutes in the middle of the oven. Muffins should be brown/golden and well raised when cooked
- Then remove from the oven and let cool on a rack.
- For an even more gourmet touch, add heated marmalade, orange peel and cranberries to muffins.
