Mustard and cheese scones recipe

A delicious recipe for mustard and cheese scones to serve with a tomato relish to surprise your guests during your Christmas aperitifs or all year round!

Ingredients (for 12 to 14 scones)
  • 340g flour
  • 80g butter
  • 55g grated cheddar or emmental cheese
  • 125ml milk
  • 4 tbsp plain yoghurt
  • 2 tbsp whole-grain mustard
  • 1 tsp baking powder
  • 1 pinch of salt
  • Folláin Tomato Relish
Steps
  1. Preheat the oven at 200°C.
  2. Grease a baking tray (or place baking paper on it).
  3. Pour the flour and yeast into a large bowl, add the salt and butter and knead with your fingertips until crumbs form.
  4. Mix the milk with the yoghurt and add to the flour-butter mixture. Add the mustard and grated cheese and mix until a soft dough forms.
  5. Knead the dough on a floured surface and roll it out to a thickness of 3cm.
  6. Cut out 12 to 14 rounds with a knife or cookie cutter and place them on the baking tray. Bake the scones for 12 to 15 minutes until they are golden brown.
  7. Let cool on rack. Serve with tomato relish as desired.
