Tomato soup

Serve this delicious tomato soup with a few slices of buttered bread, sprinkle with your favourite cheese and you've got a comforting and tasty dish for those cold winter days.

Ingredients (for 4 people)
  • 3 tbsp olive oil
  • 50g butter
  • 3 onions or 6 shallots, sliced
  • 4 garlic cloves, crushed and finely chopped⁠
  • 1kg ripe or tinned tomatoes, chopped
  • 50g tomato purée
  • 2 red chillies, finely chopped (optional)
  • 1 litre vegetable stock
  • 1 heaped tbsp Follain chargrilled red pepper relish
  • 1 pinch salt and pepper
  • 2 tbsp pesto and/or cheese of your choise
Steps
  1. Melt the butter in a large saucepan over a low heat.
  2. Add the onions or shallots and garlic, cover and sweat for 20 minutes or until tender, stirring occasionally.
  3. Add the tomatoes, tomato purée and chillies. Mix well, cover and sweat for 10 minutes.
  4. Add the stock, increase the heat and bring to the boil, then reduce the heat and simmer for 10 to 15 minutes.
  5. Add a spoonful of relish, then remove from the heat and blitz.
  6. Season to taste and serve hot with a swirl of pesto and/or cheese and a few slices of buttered bread.

Cheese lovers, this is the dish for you! Whether you're enjoying it as an aperitif with friends or as a romantic meal, it's the perfect comfort food.

Ingrédients (for 4 people)
Steps
  1. Remove the packaging from the camembert.
  2. Cut the rind off the top of the cheese and put it back in its box.
  3. Drizzle with olive oil and sprinkle with thyme leaves if you wish.
  4. Bake in a preheated oven at 220ºC for 10 to 15 minutes until the cheese has melted and bubbles appear.
  5. Serve in its box with a bowl of caramelised onion relish.
  6. Cut the bread into pieces and dip into the camembert fondue, then into the relish (you can also stir 2 teaspoons of relish into the melted cheese).

Full of flavour, deliciously appetising and easy to prepare, this burger will appeal to all food lovers, vegetarians... or not!

Ingredients (for 4 people)
  • 100g flour
  • 1 tbsp olive oil
  • Follain Irish tomato relish
  • 1 small grated onion
  • 1 clove crushed garlic
  • 1 grated carrot
  • 1 small grated summer squash
  • 1 small grated courgette
  • 50g porridge oats
  • 15g grated cheese
  • 1 beaten egg
  • 1 tbsp soy sauce
  • Some mixed herbs
  • 1 pinch pepper
  • Burger buns
Steps
  1. Heat the olive oil in a frying pan over a low heat and cook the onion and garlic for about 5 minutes, until tender.
  2. Stir in the carrots, squash and courgette and cook, stirring, for a few minutes.
  3. Remove the pan from the heat and stir in the porridge oats, cheese, mixed herbs, seasoning and egg. Add the soy sauce and mix well.
  4. Transfer the mixture to a bowl and place in the fridge for 1 hour.
  5. Spread the flour on a large plate.
  6. Shape the vegetable mixture into 4 patties and place each one in the flour, covering each side.
  7. In a frying pan, grill the patties for 5 minutes on each side, or until hot and golden.
  8. Place the patties in the burger bun and serve with a spoonful of tomato relish and the vegetables of your choice (salad, tomatoes, pink onions, etc.). Serve with your favourite side dish.
