Muffins with carrot jam, oat flakes and blueberry
Delicious muffins made from Carrot Cake Jam. Very mellow, they are a treat for breakfast or afternoon tea!
Ingredients:
- 125g of flour
- 75g whole wheat flour
- 200g of oatmeal
- 75g of brown sugar
- 3 teaspoons of yeast
- 1 teaspoons of cinnamon
- 1 teaspoon of salt
- 3 teaspoons of Carrot Cake Jam de Cottage Delight
- 2 mashed bananas
- 2 eggs, separate white and yellow
- 3 teaspoons of sunflower oil
- 250 ml of milk
- 125g of blueberries
Steps:
1) Preheat the oven to 200 °.
2) In a salad bowl, add the flour, oatmeal, brown sugar, yeast, cinnamon and salt. Mix well to obtain a uniform paste.
3) Gently add the bananas, yellow egg, milk and sunflower oil.
4) Add egg whites, Carrot Cake jam and blueberries until the mix is smooth.
5) Fill the muffin dish and place in the oven for 25 minutes.
