Chocolate and banana brownie

Ingredients:
- 200 g brown sugar
- 175 g butter, cubed
- 100 g self-raising flour
- 1 tablespoon baking powder
- 3 eggs - 2 ripe bananas
- 175 g Cadbury Dairy Milk chocolate
Method:
1/ Preheat the oven to 180°C.
2/ Line a rectangular cake tin with baking paper.
3/ Melt the sugar, chocolate and butter in a bowl over a bain-marie. Once melted, remove from the heat and mix well to combine the melted ingredients.
4/ Sift the cocoa and baking powder into a bowl.
5/ Add the chocolate mixture, eggs and bananas and mix well.
6/ Bake for 30 minutes, keeping an eye on it towards the end of cooking.

No-bake chocolate oatmeal cookies

Cookies

Ingredients:
- 130g peanut butter
- 60ml maple syrup
- 60ml coconut oil
- 100g rolled oats
- 20g desiccated coconut
- 2 tablespoons cocoa powder
- 1 pinch of salt
Method:
1/ Over a low heat, melt the peanut butter, maple syrup and coconut oil in a saucepan. 2/ Stir with a whisk, then turn off the heat.
3/ Add the cocoa powder and salt, and mix.
4/ Add the rolled oats and desiccated coconut, and mix.
5/ On a baking tray lined with baking paper, divide the mixture into 12 balls. Flatten with a spoon to shape as desired.
6/ Chill in the fridge for an hour.

Hot Cross Buns

A hot cross bun is a sweet bun made with spices, currants or raisins, and marked with a cross on top.
Ingredients:
- 24 g fresh baker’s yeast, or 1 sachet (8 g) of dried baker’s yeast
- 100 g caster sugar
- 350 ml warm milk - 450 g flour
- 1 pinch of salt - 2 teaspoons Bart’s ground cinnamon
- 1½ teaspoons ground ginger
- 50 g softened butter
- 1 egg - 200 g of raisins
- orange or lemon zest
Ingredients for the crosses:
- 2 tablespoons of water
- 2 tablespoons of flour
Ingredients for the icing:
- 50 g of caster sugar
- 3 cl of water
- 1 sheet of edible gelatine
Method:
1/ Dissolve the yeast in 2 teaspoons of caster sugar and the warm milk, then leave to rise for 10 minutes.
2/ In a mixing bowl, rub the flour and butter together with your fingertips until the mixture resembles breadcrumbs. Add the spices (cinnamon, ginger), the remaining sugar, the raisins and the egg. Mix well. Make a well in the centre and gradually stir in the milk and yeast mixture.
3/ Knead the dough by hand on a floured surface for several minutes, or in a food processor, until you have a smooth, elastic dough that no longer sticks to your fingers.
4/ Leave the dough to rise in a warm place (in a lightly oiled bowl covered with a clean tea towel) for at least 1 hour or until it has doubled in size.
5/ Divide the dough into 12 balls. Place them in a rectangular ovenproof dish or on a baking tray lined with baking paper.
6/ Do not place the dough balls too close together; leave a little space between them as they will rise further and stick together naturally. Leave to rise, covered with a clean tea towel, in a warm place for a further 30 minutes (the balls should then stick together).
7/ Preheat your oven to 200°C.
8/ In a bowl, mix the flour and water to form a smooth batter (add a little flour if it is too runny). Using a piping bag, pipe a cross onto each ball.
9/ Bake for 35 minutes, keeping an eye on them towards the end of cooking.
10/ Brush with icing. To make this, mix the caster sugar and water over a very low heat, stirring continuously. Once the sugar has completely dissolved and the syrup is clear, add a sheet of gelatine that you have left to soak for 5 to 10 minutes in cold water. 11/ Mix well and leave to cool for two minutes. Using a pastry brush, brush this glaze onto the warm rolls.
12/ Serve warm.
