Lemon cupcakes, an anglo-saxon treat

 

Delicious cupcakes with a typically British lemon curd base. Ideal for a tea time or a snack with your family !Irish Idées

Ingredients for 12 cupcakes :

- 350g of flour

- 140g of sugar

- 2 lemonsPréparation cupcakes

- 2 eggs

- 300ml of thick sour cream

- 150g of Lemon Curd Cottage Delight

- 100g of butter

Cupcake citron

The steps :

1) Preheat the oven at 180°.

2) Press the two lemons to get some juice, keep a few zests.

3) Mix the flour, sugar, lemon juice and zests.

4) In another bowl, mix the two beaten eggs with 150ml of sour cream, 150g of Lemon Curd Cottage Delight and 100g of butter.

5) Stir. Pour the batter into 12 cupcake liners. 

6) Bake for 20-25mn until golden.

7) For the frosting, mix 3 Lemon Curd Cottage Delight tablespoons with 150ml of sour cream.

8) Frost the cupcakes and add a few zests for decoration.
