Shepherd's Pie recipe for beginners

 Shepherd's Pie

The quintessential St. Patrick's Day dish, Shepherd's Pie is a family and comforting dish consisting of mashed potatoes, vegetables and meat that the Irish also enjoy throughout the winter. Traditionally made from lamb meat, it is in fact more of a gratin than a pie, contrary to what its name suggests. If you want to replace the lamb with beef, your dish will become a "Cottage pie", which is very popular in the United Kingdom and the United States.

If you'd like to give it a try, here's an easy-to-make recipe for beginners to Irish cooking to try with your family and/or friends on St. Patrick's Day.

Preparation time 15 mn
Cooking time 1h
Ingredients (for 4 people)
  • 1 tbsp sunflower oil

  • 1 large onion, chopped

  • 2-3 medium carrots, chopped

  • 500g lamb mince

  • 2 tbsp tomato puree

  • 1 tbsp Worcestershire sauce

  • 500ml beef stock

  • 900g potatoes, cut into chunks

  • 85g butter

  • 3 tbsp milk

Steps
  1. Heat the sunflower oil in a medium saucepan, then soften the onion and the carrots for a few mins.

  2. When soft, turn up the heat, crumble in the lamb mince and brown, tipping off any excess fat.

  3. Add the tomato purée and the Worcestershire sauce, then fry for a few mins.

  4. Pour over the beef stock, bring to a simmer, then cover and cook for 40 mins, uncovering halfway.

  5. Meanwhile, heat the oven to 180C, then make the mash. Boil the potatoes cut into chunks in salted water for 10-15 mins until tender. Drain, then mash with the butter and the milk.

  6. Put the mince into an ovenproof dish, top with the mash and ruffle with a fork.

  7. Bake for 20-25 mins until the top is starting to colour and the mince is bubbling through at the edges.

  8. Leave to stand for 5 mins before serving.
