Halloween Recipe: Sweet Potato Brownies

 

Sweet potato brownies

To celebrate fall and to match the theme of your Halloween party, here is a delicious recipe for sweet potato brownies to delight young and old alike.

Ingredients (for 16 brownies)
  • 500g sweet potatoes
  • 100g Flahavan's organic porridge oats
  • 100g ground almonds
  • 80g cacao powder
  • 1 tsp baking powder
  • 50g hazelnuts, chopped
  • 4 tsp maple syrup
  • 2 ysp coconut oil
  • 1 tsp vanilla extract
  • 1 beaten egg
  • 200g pitted dates

For icing (optional) :

  • 100g icing sugar
  • 40g butter
  • 40g cream cheese
Steps
  1. Preheat the oven to 180°C.
  2. Peel the sweet potatoes then cut them into pieces and steam them for about 20 minutes until softened.
  3. Blitz the oat flakes in a food processor to obtain a fine texture then add to a mixing bowl with the almonds, cocoa powder, baking powder and hazelnuts.
  4. Add the maple syrup, coconut oil, vanilla extract and beaten egg, then mix well.
  5. Blend the sweet potatoes and dates together.
  6. Pour the mixture obtained into the mixing bowl, and stir to combine.
  7. Pour the mixture into a square dish and cook for around 35 minutes at 180°, then lower the temperature to 140°C and leave in the oven for 20 minutes.
  8. Remove the brownies from the oven and let cool completely before adding the icing and cutting the brownie into squares.
  9. For the icing, simply mix the icing sugar, butter and cream cheese together then spread the mixture over the brownie using a spatula.
