This second opus Ephémère n°7 was distilled in 2007 and benefited from prolonged ageing for 15 years in American oak barrels in a tropical environment.
The St James house wears black for its new collection of Bruts de Fûts from the collection of Cellar Master Marc Sassier. Each bottle of the vintage quadrilogy bears a number to recall the date of creation of the distillery: 1, 7, 6 and 5.
This second opus Ephémère n°7 was distilled in 2007 using pure cane juice in a traditional Creole column. This rum has benefited from prolonged ageing for 15 years in American oak barrels in a tropical environment, without topping* or reduction.
Limited series of 2720 bottles worldwide.
*Toping consists of supplementing the barrel during ageing to compensate for evaporation.
