In Gaelic, Dair Ghaelach, pronounced "dar gayloch" simply means Irish oak. Each edition comes from a maturation in barrels of different Irish forests.

The fourth chapter in the Midleton Dair Ghaelach series takes us to Kylebeg Wood on the Ballykilcavan Estate near Stradbally, Co. Laois. Set amongst rolling barley fields, the estate's native Irish forest has been carefully managed and in harmony with nature by the Walsh-Kemmis family for thirteen generations, beginning in 1639.

Today, David Walsh-Kemmis manages the majestic oak stands of Kylebeg Wood, using a 'close to nature' forest management system in line with AFI best practice. Under David's able supervision, seven trees were carefully felled to produce the finest Irish oak hogsheads for the latest chapter in the Dair Ghaelach series.

Once harvested, the oak logs yielded 42 barrels, each lightly toasted to specifications set by Master Distiller Kevin O'Gorman.

These magnificent Single Pot Stills have aged between 15 and 28 years in ex-Bourbon American oak barrels, before benefiting from the famous 24-month refining in 42 Irish oak Hogshead barrels.

This fourth edition thus offers 7 different bottlings, each with its own nuances linked to the influence and interactions with the chosen oak. A whiskey as pleasantly Irish as it is undeniably elegant.

In 1966, John Jameson & Son decided to merge with whiskey production companies John Power & Cork Distillers to form the Irish Distillers Ltd group, today owned by Pernod-Ricard.



The complete whiskey production has been relocated in Midleton, near Cork, where a new distillery has been built. Midleton is located near the distillery of the same name, founded in 1825 by the Murphy brothers.


Midleton distillery is one of the most modern distilleries worldwide. Its production capacity reaches 19 million liters of alcohol per year; with 13 stills producing every type of Irish whiskeys (Irish Pot Stills, single malts, and single grains). The ancient buildings of the distillery have been kept and turned into a museum.


Named “The Jameson Heritage Center”, we may admire an amazing water wheel from 1852, a stationary steam machine used to power the distillery and the biggest still the world. It is in one of these old Georgian architecture stone buildings with red shutters that Barry Crockett, the current Midleton distillery Director, was born. The Old Midleton style: even with a great range of expressions, Midleton’s whiskeys develop a unique character. They have a specific fruity nose (red fruits) with a spicy backdrop and sweet notes of grains. The distillery produces exceptional pure pot still whiskeys, such as Redbreast.

Nose: fragrant woodland spices with notes of cinnamon and nutmeg to the fore, accompanied by aromatic oils and earthy pot still notes. Delicate hints of nectarine develop to create a zesty fruit note with a dusting of white pepper. Additional aromas of dairy fudge and vanilla further accentuate the sweet nature of the whiskey.

Palate: fortified by the Irish Oak, the pot still spices lead with a heightened intensity thanks to the rich wood tannins before subsiding to reveal velvety tones of caramel with sweet stewed apple and touches of orange peel. Dark chocolate with subtle notes of honeycomb and vanilla weave amongst the spices.

Finish: delightfully long finish, with the fruits and apices slowly fading, allowing the Irish Oak to linger until the very end.
