First distillery built on Islay, 125 years ago, Kilchoman has been built as a “farm-distillery” and grows its own barley.

About 100 tons are harvested and malted at the distillery, 30% of the distillery’s needs. The rest is supplied by the Port Ellen malt-house. It is also part of the 6 last distilleries operating with traditional malting processes. In 2009, Kilchoman crafted its first recognized Single Malt. Kilchoman is one of the smallest distilleries of Scotland with an annual production of about 100.000 liters.

Nose: on the first nose, behind apricot and cereal (barley) aromas, we catch a glimpse of smoke, soot, smoked meat aromas as well as an oily peat. When aired, scents of toast and lavender honey intermingle with exotic fruits (mango, guava). Increasingly complex, the aromatic palette evolves with notes of verbena, iodine and heady flowers (carnation).

Palate: dense, the attack on the palate oscillates between dark chocolate, nutmeg, salted butter caramel, toasted nuts and tobacco. Of course, the peat weighs in a subtle and light way on the unfolding of the taste palette. The very end of the mouth is undeniably medicinal (camphor), iodine and herbaceous (gentian). It evokes the smoke rising from a chimney.

Finish: long and airy. Very pure, the start of the finish is riddled with the sources of a peaty but also very fruity distillate (strawberry, raspberry). More and more heady (rose petal, blackberry bramble, vetiver), it is also roasted (coffee) and nobly spicy (cardamom). In retro-olfaction, flavours of tincture of iodine and toffee form a particularly harmonious whole.
