An expert in his trade, Ed Harpur is a farmer located on the far south coast of County Wexford. He's always smiling and his mom cooks delicious scones: some of the best in Ireland!

Ed's barley is grown on difficult and poor soil: sandy soil on a seaside dune peninsula in southern Ireland a few feet from the ocean. In summer, the sea air and the salt are deposited directly on the barley, the salt crystallizes and whitens the barley fields, which gives the barley hints of iodine.

Distilled in 2016, this Waterford Single Farm Origin Bannow Island Ed. 1.2 whisky is aged 4 months more than version 1.1, which corresponds to approximately 10% additional aging. This additional maturation brings to the whisky of almost 4 years a huge change, because at this age the whisky evolves very quickly in cask.

This 100% Irish Single Malt develops a rounder character than the 1.1 edition thanks to a more marked use of natural sweet wine barrels, while maintaining the malty and fruity style of this sandy terroir.

The Bannow Island is aged in American and French barrels with a blend of Bourbon (35%), new oak (20%), French (25%) and natural sweet wine (20%).

This edition is therefore a very playful whisky if one seeks to follow the evolution of the aromatic character of this barley over time.

The Waterford distillery was launched by Mark Reynier in Ireland, drawing inspiration from the greatest winegrowers in the world, and is generating enormous interest among whisky lovers around the world.


After having brilliantly directed the Bruichladdich distillery, Mark Reynier launched a new challenge in the world of whisky with Waterford, that of transparency to reveal and enhance the spirit of the terroirs. The distillery will relentlessly transpose to the single malt whisky the same intellectual approach, the same methodology and the same rigor that exist in the world of wine.


Through its “Téireoir code” system, Waterford makes known all the indications which influenced the qualities of its bottlings, of the soil of the field, through its geolocation, the variety of barley, yeast, the barrels used and the assembly carried out: a terroir, a farm, a harvest ... As a bonus, interviews with farmers, superb photos and the sounds of the field can be found on the page dedicated to each Single Malt.


Waterford thus reveals the often underestimated influence of all the elements such as the earth, or the microclimate on the production of whisky.
