This 2011 Kilchoman was made from locally grown barley at the Rockside farm and then malted and peated (20 ppm) at the distillery.

Impressively mature, this Single Malt has aged in Sherry Olorosso casks for 10 years.

Aromatic profile: peaty with hints of spices, candied citrus fruits, black fruits as well as animal and medicinal notes.

Bottled without chill-filtration, in its natural colour.

First distillery built on Islay, 125 years ago, Kilchoman has been built as a “farm-distillery” and grows its own barley.


About 100 tons are harvested and malted at the distillery, 30% of the distillery’s needs. The rest is supplied by the Port Ellen malt-house. It is also part of the 6 last distilleries operating with traditional malting processes. In 2009, Kilchoman crafted its first recognized Single Malt. Kilchoman is one of the smallest distilleries of Scotland with an annual production of about 100.000 liters.

Nose: the first nose reveals a perfect balance between, on the one hand, notes of rancio (beeswax, apricot, toffee) inherent in sherry and on the other hand, a finely oily, spicy peat (nutmeg, clove) , saline and vegetable (pipe tobacco). When aired, candied citrus fruits (orange, kumquat) and some black fruits (blueberry, blackcurrant) appear. The phenolic, animal and medicinal character of peat is gradually taking over.

Palate: peaty, the attack on the palate is also honeyed (lime blossom, heather), creamy (almond milk) and praline (influence of sherry). As for the mid-palate, it is marked by notes of salted butter caramel, pecans, coffee and infused black tea. The aftertaste is medicinal (tincture of iodine), mineral (slate) and rustic (dandelion).

Finish: long and noble. Built around a remarkable malty bitterness, it lingers on flavours of gingerbread, zucchini in bloom and peppermint.
