First distillery built on Islay, 125 years ago, Kilchoman has been built as a “farm-distillery” and grows its own barley.

About 100 tons are harvested and malted at the distillery, 30% of the distillery’s needs. The rest is supplied by the Port Ellen malt-house. It is also part of the 6 last distilleries operating with traditional malting processes. In 2009, Kilchoman crafted its first recognized Single Malt. Kilchoman is one of the smallest distilleries of Scotland with an annual production of about 100.000 liters.

Nose: full and powerful. On the first nose, a block of peat imposing richness and presence fully occupies the olfactory space. When aired, abundant smoke, medicinal (mustard seeds) and animal (smoked bacon) notes accentuate the phenolic character of the nose.

Palate: oily and chocolatey, the attack on the palate features oily, marine (seaweed) and saline peat. Saturated by an intense smoke, the mid-palate is at the same time unctuous. Very animal (smoked fish, bresaola), the aftertaste is full of spices (cloves, nutmeg) and medicinal notes (tiger balm) and camphor.

Finish: long and smooth. At the start of the finish, intensely smoked malted barley grains sweep over the palate. At the same time, dark chocolate and gentian roots enhance this absolutely delicious malty bitterness.
